Role Overview
The Specialty Chef de Cuisine leads culinary operations for an assigned specialty dining concept within an exclusive luxury destination.
The role oversees menu development, food preparation, kitchen standards, team performance, cost control, and daily service delivery.
Key Responsibilities
- Lead daily culinary operations and maintain menus aligned with the dining concept.
- Create, test, cost, and standardize recipes and preparation methods.
- Ensure consistent food quality, preparation, portioning, presentation, and innovation.
- Plan production for regular service, private functions, events, and special occasions.
- Supervise, schedule, train, motivate, and develop culinary team members.
- Conduct briefings, tastings, training sessions, and operational meetings.
- Maintain food safety, hygiene, sanitation, health, fire, and workplace-safety compliance.
- Inspect kitchens, equipment, storage, and preparation standards.
