Responsibilities
- Lead and supervise all catering operations across all company sites.
- Manage daily operations of kitchens, restaurants, dining halls, buffet services, meal packing units, and food preparation areas.
- Ensure all facilities are maintained clean, organized, hygienic, and fully operational.
- Supervise all catering employees including chefs, cooks, waiters, and cleaning staff.
- Ensure meals are prepared according to approved menus, recipes, and quality standards.

- Manage the daily operations of all kitchens, restaurants, dining halls, buffet services, meal packing units, food preparation areas, and catering facilities across all company locations.
- Ensure all restaurants, dining halls, kitchens, buffet areas, food preparation rooms, storage areas, and catering facilities are maintained clean, organized, hygienic, and fully operational at all times.
- Supervise all catering employees including Restaurant Supervisors, Kitchen Supervisors, Chefs, Sous Chefs, Cooks, Assistant Cooks, Bakers, Butchers, Kitchen Helpers, Waiters, Buffet Attendants, Food Packing Teams, Stewards, and Cleaning Staff.
- Ensure all buffet services are fully prepared, opened, replenished, monitored, and closed according to the approved operational schedule and company procedures.
- Ensure all meals are prepared, cooked, presented, and served according to the approved menu, recipes, nutritional requirements, portion sizes, food specifications, and quality standards.
- Manage and supervise the Meal Packing Section to ensure all packed meals are properly prepared, labelled, packed, stored, transported, and distributed according to approved procedures and food safety requirements.
- Monitor food preparation, cooking, packing, transportation, and meal distribution to ensure timely delivery, food quality, and compliance with operational procedures.
- Conduct regular inspections of kitchens, restaurants, dining halls, buffet stations, food packing areas, warehouses, chillers, freezers, food transportation vehicles, and storage facilities to ensure operational excellence.
- Ensure strict implementation of HACCP, Food Safety Standards, Municipality Regulations, Hygiene Procedures, Cleaning & Sanitization Programs, Pest Control Requirements, Personal Hygiene Standards, and Health & Safety regulations.
- Monitor kitchen cleanliness, restaurant cleanliness, buffet cleanliness, equipment sanitation, housekeeping standards, waste disposal procedures, staff hygiene, uniforms, PPE compliance, and handwashing practices.
- Ensure all catering staff comply with Standard Operating Procedures (SOPs), company policies, operational manuals, food safety standards, and quality requirements.
