Job Summary

Manage daily beverage operations and staff in restaurants, bars, and room service.

Support lounge promotion, menu planning, service standards, liquor inventory control, guest satisfaction, and operating budget performance.

Enforce applicable legal obligations and strengthen the food and beverage team through training and support across outlets.

Education and Experience

  • High school diploma or GED plus four years of experience in food and beverage, culinary, or a related professional area.
  • Alternatively, a two-year degree in Food Service Management, Hotel and Restaurant Management, Hospitality, Business Administration, or a related major plus two years of relevant experience.

Beverage Operations

  • Ensure compliance with beverage policies, standards, and procedures through training, supervision, follow-up, and hands-on management.
  • Implement beverage policies throughout the property and comply with applicable beverage and liquor laws.
  • Manage beverage control activities including inventory, bar pars, portion control, cost controls, sales mix analysis, issues, returns, and period-end inventory.
  • Maintain food handling and sanitation standards, manage inventories, and assist with menus and promotions.

Team Leadership

  • Train staff on liquor control policies and procedures.
  • Supervise staffing levels to meet guest service, operational, and financial objectives.
  • Ensure employees understand expectations and communicate critical event information to beverage staff.
  • Support departmental orientation and new-hire training programs and participate in corrective action plans.

Customer Service and Finance

  • Attend pre- and post-convention meetings as needed to understand group needs.
  • Review budgets, operating statements, and payroll progress reports to support departmental financial management.
  • Manage controllable expenses and work toward or exceed budgeted goals.
  • Interact with guests, respond to problems and complaints, review satisfaction results, and coach employees on service performance.
